Spicy Peanut Noodles

Ingredients — 4 Servings

  • 300 g noodles
  • 300 g broccoli
  • 250 g immature soybeans (edamame), raw
  • 4 tbsp peanut butter
  • 2 tbsp sesame seeds
  • 3 cloves garlic
  • 1 piece ginger root, raw
  • to taste chili flakes
  • 5 tbsp soy sauce
  • 2 tbsp lime juice
  • 3 spring onions, raw
  • to taste salt

Instructions

    Bring salted water to a boil in a pot.

    In a pan, mix together peanut butter, sesame seeds, chopped garlic, finely chopped ginger, spring onions, chili flakes, soy sauce, and lime juice.

    Add the pasta to the boiling water. Break the broccoli into small florets and add them along with the edamame about 2 minutes before the pasta's cooking time ends, and briefly cook together.

    Then drain everything through a sieve, reserving the pasta water.
