Spinach Dumplings

Ingredients — 4 Servings
- 500 g frozen leaf spinach
- 125 ml milk
- 4 pieces of day-old rolls
- 2 pieces of eggs
- 1 piece of onion
- 3 tbsp freshly grated Parmesan
- 3 tbsp breadcrumbs
- 1 tbsp butter
- 1 tsp salt
- 1 pinch of pepper
- 1 pinch of freshly grated nutmeg

500 g frozen leaf spinach should be thawed at room temperature. Then, squeeze it firmly with your hands to remove as much water as possible and chop it finely.

Cut the 4 stale rolls into approximately 1 cm cubes and place them in a large bowl.

Peel the onion and chop it into fine cubes. Then, sauté it in a small pot with 1 tablespoon of butter until translucent.

Next, add 125 ml of milk and season with 1 teaspoon of salt, 1 pinch of pepper, and 1 pinch of freshly grated nutmeg, and let it heat briefly.
