- 4 g matcha powder
- 200 g silken tofu
- 75 g coconut quark
- 4 tbsp powdered sugar
- 1 tsp guar gum
- 0 as needed tonka bean
- 13 pieces ladyfingers without sugar crust↗
- 1 tbsp cocoa powder
- 1 tbsp pistachios
Instructions

Boil the water for the infusion, let it cool to 80 degrees, sift the matcha powder, mix it with a little cold water, and then whisk it with the hot water until frothy.

Line a loaf pan with parchment paper and process the silken tofu together with the coconut Quark into a smooth cream.

Sift the powdered sugar and guar gum into the tofu-Quark mixture and incorporate, then refine with a bit of tonka bean.

Quickly dip the ladyfingers into the matcha infusion and spread a layer of them as the base in the pan.
