- 15 g chives
- 50 g spring onions
- 2 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tbsp lime juice
- 150 g edamame
- 370 g quinoa
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 2 tbsp sesame oil
- 1 piece avocado
- 450 g asparagus

Preheat the oven to 200°C.

Mix the quinoa thoroughly with the soy sauce and sesame oil, then spread the mixture evenly on a baking sheet.

Drizzle the asparagus on another sheet with olive oil, and a pinch of salt and pepper.

Roast both sheets in the oven for about 15 to 25 minutes, until the quinoa reaches a crispy texture and the asparagus shows a light browning.
