- 400 ml Reduced-fat Coconut Milk
- 1 tbsp Mild Curry Paste
- 1 piece Ginger
- 2 cloves Garlic
- 2 pieces Eggs
- 1 tsp Olive Oil↗

Instructions

Peel the ginger and finely chop it together with the garlic.

Heat some oil in a pot and briefly sauté the chopped garlic and ginger.

Add the red curry paste and sauté it for another minute.

Pour in the coconut milk and mix everything well.

Bring the sauce to a brief boil and then reduce the heat.
