Ingredients — 2 Servings

  • 30 g corn
  • 30 g peas
  • 5 eggs
  • 100 g pickles
  • 400 g potatoes
  • 1 red onion
  • 200 g cottage cheese
  • 100 g skyr
  • 1 tbsp mustard
  • 15 ml pickle juice
  • salt to taste
  • pepper to taste
  • 1 bunch parsley

Instructions

    Peel the potatoes, cut them into large pieces, and then cook them in salted water until done.

    Boil the eggs until they are hard.

    Dice the pickles and red onion into small cubes, while draining the corn and peas.

    Chop two of the hard-boiled eggs and set them aside for later use.
