One Pot Noodle Salmon Casserole

Ingredients — 2 Servings

  • 150 g cherry tomatoes
  • 400 ml vegetable broth
  • 250 g salmon fillet
  • 150 g whole wheat pasta
  • 150 g spinach
  • 1 handful basil seasoning
  • 60 g cashew nuts
  • 100 ml water
  • 1 tsp tahini
  • 2 tbsp nutritional yeast
  • salt to taste
  • pepper to taste

Instructions

    Blend the soaked cashews together with nutritional yeast, tahini, water, as well as salt and pepper into a fine cream.

    Place the fresh spinach and cherry tomatoes in a baking dish.

    Distribute the pasta and diced salmon over the vegetables.
