- 450 g chicken breast fillet
- to taste pepper and salt
- 5 tsp olive oil
- 40 ml BBQ sauce
- 2 tsp mustard
- 2.5 tbsp honey
- 20 g coriander
- 4 cloves garlic
- 85 g quinoa, uncooked
- 225 ml vegetable broth
- 1 lime
- 450 g spinach, fresh
- 100 g cherry tomatoes
- 1 avocado
- 2 spring onions

Cut the chicken breast into bite-sized pieces and season with pepper and salt.

Chop the garlic finely.

Mix olive oil, BBQ sauce, mustard, and honey, along with half of the cilantro and the garlic in a small bowl and marinate the chicken breast with it.

Heat a pan with the remaining olive oil and add the marinated chicken, frying until it is lightly browned on both sides.
