Juicy Protein Lemon Cake

Ingredients — 1 serving

  • 20 g spelt flour
  • 10 g cream protein
  • 40 g light yogurt
  • 1 piece egg
  • 50 g erythritol
  • 2 tbsp lemon juice
  • 4 g baking powder
  • 5 g lemon zest
  • 30 g cream cheese
  • 20 g low-fat quark
  • 5 g lemon zest
  • 25 g powdered erythritol

Instructions

    Beat the egg with the erythritol until frothy.

    Then mix with the remaining ingredients for the dough until smooth.

    Pour the dough into a small silicone mold (12 or 16 cups).

    Bake in the oven at 180 °C (top and bottom heat) for about 20–25 minutes.
