High Protein Stir-Fry with Broccoli

Ingredients — 2 Servings

  • 1 tsp Coconut oil
  • 150 g Smoked tofu
  • 2 tsp Paprika powder, hot
  • 2 tsp Ground cumin
  • 4 tsp Soy sauce
  • 300 g Broccoli
  • 150 g Udon noodles
  • 1 piece Lime
  • 1 tbsp Tahini
  • 1 tbsp Peanut butter
  • 1 tbsp Maple syrup
  • 1 tsp Curry powder
  • 5 g Fresh coriander

Instructions

    To begin with the tofu crumble, add the coconut oil to a pan and heat it up.

    Crumble the smoked tofu with your hands, season with paprika powder and cumin, and sauté for about 2 minutes, stirring occasionally over medium heat.

    Now deglaze with half of the soy sauce and stir. Sauté for another minute, then transfer to a bowl and set aside.

    Divide the broccoli into florets.
