Green Carbonara with Roasted Brussels Sprouts

- 600 g Brussels sprouts
- 1 piece Red onion
- 2 cloves Garlic
- 1 tbsp Fennel seeds
- 1 tbsp Olive oil
- 300 g Whole grain pasta
- 200 g Frozen peas
- 200 g White beans
- 100 g Cashews
- 2 tbsp Lemon juice
- to taste Pepper
- to taste Salt
- 200 ml Oat milk
- 3 tbsp Maple syrup

Peel the onions and garlic, then finely chop them.

In a pan with a little olive oil, sauté slowly over medium heat.

Preheat the oven to the highest setting (preferably grill function) and line a baking sheet with parchment paper.

Wash the Brussels sprouts, trim the ends, and cut them in half.

Parboil in a pot with water and a little salt for about 6-8 minutes.

Prepare the pasta according to package instructions and reserve half a cup of the cooking water for the sauce.
