Cauliflower Alfredo Pasta

Ingredients — 4 Servings
- 400 g whole grain spaghetti
- 500 g cauliflower
- 1 onion
- 1 clove of garlic
- 1 tbsp olive oil
- pepper and salt to taste
- 100 g canned chickpeas
- 1 lemon
- 500 ml unsweetened oat drink
- 15 g nutritional yeast
- fresh parsley to taste

First, bring water to a boil in a large pot and cook the spaghetti al dente in it.

Meanwhile, roughly chop the cauliflower, peel and dice the onion, and peel and slice the garlic.

Heat the olive oil in a large pan and sauté the cauliflower over medium heat for about 7 minutes, stirring occasionally. Then add the diced onion and garlic and sauté for another 3 minutes.
