Ingredients — 2 Servings

  • 100 g Quinoa
  • 150 g Sweet Potato
  • 13.5 ml Olive Oil
  • 2 g Ground Cumin
  • Salt and Pepper to taste
  • 120 g Shelled Edamame, frozen
  • 100 g Arugula
  • 120 g Black Beans, canned
  • 3 g Garlic Clove
  • 15 ml Lemon Juice 100%
  • 150 g Soy Yogurt
  • 15 g Mustard
  • 20 g Tahini
  • 5 g Fresh Cilantro

Instructions

    Preheat the oven to 200 °C (top/bottom heat).

    Prepare the quinoa according to package instructions.

    Peel the sweet potato and cut it into small cubes.

    Then mix the sweet potato cubes with olive oil, cumin, salt, and pepper, and place them on a baking sheet lined with parchment paper. Bake in the middle rack for about 20 minutes.
