Ingredients — 2 Servings

  • 60 g pistachios
  • 60 ml olive oil
  • 60 ml lemon juice
  • 30 g honey
  • 30 ml apple cider vinegar
  • 0.5 bunch chives
  • to taste salt
  • to taste pepper
  • 200 g arugula
  • 1 fennel bulb
  • 50 g Parmesan
  • 30 g pistachios
  • 4 radishes

Instructions

    For the dressing, finely chop the chives and blend them together with the pistachios, honey, lemon juice, apple cider vinegar, oil, salt, and pepper in a blender until smooth.

    Use a mandoline to slice the fennel bulb very thinly into fine strips.

    If needed, also slice the radishes finely.
