Omelette with Black Beans

- 3 pieces eggs
- to taste pepper and salt
- 1 tbsp water
- 200 g black beans, canned
- 1 tbsp olive oil
- 80 g mozzarella, shredded
- 100 g salsa sauce
- 10 g cilantro, fresh
Instructions

Crack the eggs into a small bowl and season with salt and pepper. Add the water and whisk everything together well.

Drain the beans, rinse them, and set aside.

Heat the olive oil in a pan over medium heat. Pour the egg and water mixture into the pan and tilt it slightly until the entire pan is covered.

Fry for about 2 minutes. Once the eggs start to set, add the black beans along the center from top to bottom on the omelette. Top with mozzarella and fry for about 1 more minute.
