Juicy Poppy Seed Curd Bites with Raspberries

Ingredients — 6 Servings

  • 150 g raspberries
  • 0 as needed vanilla
  • 400 g low-fat Quark
  • 50 g maple syrup
  • 10 g starch
  • 20 g vanilla protein
  • 2 eggs
  • 100 g poppy seeds
  • 30 ml almond milk

Instructions

    Preheat the oven to 180°C and line a 20 cm baking dish with parchment paper.

    Separate the eggs and mix the poppy seeds with half of the maple syrup, almond milk, protein powder, egg yolks, and 150 g of low-fat Quark into a smooth mixture.

    Beat the egg whites until stiff peaks form and gently fold them into the poppy seed batter.

    For the Quark layer, mix the remaining Quark with the cornstarch, vanilla, and the rest of the maple syrup.
