Pad Thai with chicken breast

Ingredients — 3 Servings

  • 150 g cooked rice noodles
  • 225 g grilled chicken breast fillet
  • 3 tbsp olive oil
  • 2 whole raw chicken eggs
  • 1 tsp mayonnaise with vinegar
  • 15 ml fish sauce
  • 1 tbsp apple-banana salad sweetened with honey
  • to taste paprika powder
  • to taste pepper and salt
  • 70 g mung bean sprouts
  • 20 g roasted peanuts
  • 20 g raw spring onion/scallion
  • 0.5 raw lemon

Instructions

    Prepare the rice noodles according to the package instructions.

    Cut the chicken breast fillet into small pieces and sauté in a pan with 1 tablespoon of olive oil, then set aside.

    In the same pan, heat the remaining olive oil and crack in the eggs, cooking until they are golden yellow.
