Green Goodness Salad

Ingredients — 2 Servings

  • 1 piece pointed cabbage
  • 1 piece cucumber
  • 2 pieces spring onions
  • 1 piece avocado
  • 80 g cashew nuts
  • 3 tbsp nutritional yeast
  • 1 piece lemon
  • 1 clove garlic
  • 1 handful fresh herbs
  • 4 tbsp water
  • 2 tbsp olive oil
  • 1 tsp maple syrup
  • salt to taste
  • pepper to taste

Instructions

    Cut the pointed cabbage, cucumber, and spring onions into fine pieces and place them together in a large bowl.

    To prepare the dressing, blend the avocado, soaked cashews, nutritional yeast, lemon juice, garlic, herbs, water, oil, maple syrup, as well as salt and pepper in a blender until smooth.

    If the dressing is too thick, simply increase the amount of water slightly.
