Crispy Caesar Salad with Chicken Breast Strips

Ingredients — 1 serving

  • 1 slice whole grain bread
  • 1 tbsp olive oil
  • 1 clove garlic
  • 50 g yogurt, 0.1% fat
  • 2 tbsp grated Parmesan
  • 1 tbsp lemon juice
  • 1 tsp mustard
  • pepper and salt to taste
  • 1 chicken breast fillet
  • 1 head romaine lettuce

Instructions

    Cut a slice of whole grain bread into small cubes and mix them in a bowl with olive oil. Sauté the croutons in a pan and then set them aside.

    Chop the garlic clove finely and mix it with the yogurt, the Parmesan, and one tablespoon each of lemon juice and mustard. Season everything well with pepper and salt.
