Watermelon Rice Salad with Chicken

Ingredients — 2 Servings
- 10 g ginger, grated
- 10 ml maple syrup
- 1 piece lime
- 2 tsp olive oil
- 400 g chicken breast fillet
- 500 g seedless watermelon
- 200 g fresh spinach
- 60 g alfalfa sprouts
- 25 g basmati rice
- 20 ml soy sauce
Instructions

Mix ginger, soy sauce, and maple syrup with the juice of half a lime.

Sear the chicken breast in an ovenproof pan with olive oil on both sides for 1 minute each. Then add the ginger sauce and briefly continue frying.

Now place the chicken breast in the preheated oven at 120°C for about 20 minutes.

Prepare the basmati rice according to package instructions.
